How To Spot True Freshness

1. Inspect the Gills & Eyes

The defining mark of a fresh catch lies in the details. Gills should be a bright, vibrant red, never muddy or brown. The eyes must be clear, plump, and slightly bulging—avoid cloudy or sunken eyes, as they indicate age.

2. The Touch Test

Firmness is crucial. When gently pressed, the flesh should spring back immediately. If an indentation remains, the structural integrity of the meat is failing. Scales should lay flat and be tightly attached to the skin.

3. The Scent of the Ocean

True quality seafood does not smell overtly "fishy." It should carry a clean, briny aroma—exactly like a fresh ocean breeze. Any harsh or sour odors are an immediate sign to walk away.
